~Mutabak~ yum!

Last night I experimented with a brand new recipe, given to me by my great friend Christine. It has seriously been a looong time since I've tried anything new and discovered this little gem of a recipe in Christine's kitchen..simmering on her stove..

It's a Middle Eastern dish and I have had many requests for the recipe. So here you are.

MUTABAK

3 boneless chicken breasts, diced
2 medium sized onions, chopped
4 garlic cloves, chopped
4 cups chicken broth or water
2 tsp. salt
1 1/2 tsp. mixed spices (1 tsp.cinnamon, 1 tsp.allspice, 1/2 tsp black pepper)
1 can garbanzo beans
2 cups, parboiled rice, uncooked

Fry garlic and onions in olive oil. When brown, add the chicken with salt, mixed spices and pepper. Partially cook the chicken. Add a little water as needed during cooking. Next add garbanzo beans and rice. Mix together then add 4 cups broth or water. Bring to boil then turn off stove and let steam for 20-25 minutes or until water is evaporated.
