Domestic Science:: Eazy Peazy Tortellini Soup with Homemade Biscuits

Have a new category to the blog I'd like to call 'domestic science'. The art of domesticity is also a science. It can require calculating, formulating, processing at times..but in my case, when it comes to cooking, I don't measure...I 'eyeball' measurements and TASTE (the fun part). So, here is a recipe I will share that is quick, easy, and most of all kid-approved! (At least, in our household!)

Tortellini & Veggie Soup with 'Homemade' Cheese Biscuits

In a large soup pot, saute finely chopped garlic & onions in olive oil until soft. Pour in 1 whole box of chicken broth and top with a few cups of water. Add cumin, bay leaves, salt to taste. Bring to boil; add frozen veggies (half bag)- I choose the peas,carrots & corn mix. Simmer for a few minutes, then add 1 package of cheese tortellini. Cook tortellini according to pkg instructions. Keep taste testing (hard, I know)to make sure you have added enough spices. I keep it simple with salt, cumin and bay leaves (dried) but you can also add pepper, a dash of curry powder..whatever suits your fancy!

In the meantime, here's my 'homemade' version of cheese biscuits. Grab a box of Bisquick (cheater!) and pour half of mix in bowl with a couple of cups of milk. Stir, stir, stir, until you reach a firm consistency. Cut up small cubes of medium cheddar and stir into dough. I literally take a spoon and just drop hunk of batter out on an ungreased cookie sheet. Toss in oven preheated to 400F for 8-10 minutes. Serve with buttah baby!

And voila! Tastes better the next day when all the flavours have 'melded' together..mmm...it was my breakfast AND lunch today!
